Recipe #4: Buddha Bowl

Eating healthy is hard.

When we live in a world of P Terry’s, Taco Shack, and other ample amazing to-go foods, it’s hard to set time aside to make your own fresh and healthy meal. I’ve tried to simplify this so that we can try to eat healthier, together, united, as foodies in Austin.

ngredients:

1/4 cup edamame, unshelled
1/2 cup steamed broccoli
1 handful mixed greens
1/2 lb of chicken breast chunks
1/2 cup white or brown rice
1/4 cup cabbage
1/3 cup zucchini
2 tbsp sunflower or avocado oil
3 tbsp of tamari
2 tsp of fish sauce
2 tsp of rice vinegar
a squirt of honey
2 tsp garlic powder
salt and pepper, to taste
sesame seeds, for garnish

Directions:

  1. Steam broccoli until tender and cook your grain (God bless rice makers).
  2. Slice your zucchini and chop your chicken.
  3. Add oil to a large pan over medium heat, and cook chicken with the tamari, fish sauce and rice vinegar., honey, garlic powder, salt and pepper. Stir fry in pan for about 7-8 minutes and remove from pan, leaving the drippings.
  4. Sautée zucchini, cabbage, and edamame for a 2 – 3 minutes.
  5. Put your bowl together! Layer the mixed greens at the bottom, then add the edamame, broccoli, zucchini, cabbage, chicken breast, rice, and drizzle any extra sauce over the top. Add sesame seeds for garnish

This is super filling and packed with tons of nutrients, and only takes about 10 minutes to make! Feel free to add other veggies + proteins you love. This would be yummy with brussels sprouts, shrimp, asparagus or salmon as well! Or my go-to: a fried egg on top. It can never do you wrong.
