Recipe #11: Meatloaf (Whole30)

For my next Whole30 compliant recipe, I bring you a homemade classic: meatloaf! My boyfriend loves this as a main dish and I gotta say, I did a pretty good job making it.

Ingredients:

1 Vital Farms egg (it makes such a difference using pasture raised eggs!)
1/2 green bell pepper, chopped
1/2 onion, chopped
1 lb grass-fed organic ground beef
1/4 cup of almond flour
1/4 cup of almond milk
2 garlic cloves, minced
1 tbsp garlic powder
1 tbsp of Italian seasoning
salt and pepper

Sauce:

1/3 cup sugar-free ketchup
1/3 cup mustard
1/3 cup sugar-free BBQ sauce

Directions:

Throw all ingredients in a bowl and mix together well.

Grease a loaf pan and fill pan with the meatloaf mixture.

Mix sauce ingredients in a bowl and spoon on top.

Bake on 375 for 45 minutes.

Slice and serve with mashed potatoes and green beans!

This made 4 servings and is great to package and reheat for meal planning ease!
