The Carillon: Chef’s Tasting Menu

I had the incredible honor and pleasure to dine at The Carillon and be treated to their Chef’s Tasting Menu by Chef Dan and their team. I can’t believe I’ve never visited their amazing restaurant before because I was blown away by everything they made. Course’s 5 and 8 were my absolute favourites, but I enjoyed each and every one of them! The way the flavors, textures, and colors blended together harmoniously is a thing of art.

Course 1: an amuse bouche shishito pepper, aioli, chili powder

Course 2: another amuse bouche corn fritter with tomato jam, aioli, micro greens

Course 3: Watermelon salad with basil, mint, pickled peppers, crispy chorizo

Course 4: Celeriac soup, housemade bacon, grilled leek, harissa

Course 5: Parisian gnocchi with fennel, oyster mushrooms, carrots, watercress, beurre blanc

Course 6: Grilled octopus, balsamic greens, carrots, heirloom tomatoes, micro greens

Course 7: seared chilean sea bass, sunchoke puree, roasted cauliflower, grapefruit gastrique

Course 8: rack of lamb, israeli couscous, eggplant, artichoke, oregano, black garlic tahini

Course 9: sticky toffee pudding, fig coulis, vanilla ice cream, cookie crumbles
