A Slice of Summer Pop-Up Dinner

Published by Monique on

I had the honor and joy to cook at Forthright’s kitchen once again for a pop-up dinner on August 2nd. I titled this night “A Slice of Summer” to represent some of summer’s best ingredients. Best of all – everything was gluten free!

The first course featured red beets with walnuts, goat cheese, and reduced balsamic.

The second course featured savory salmon cakes, mixed greens, summer squash, and Fischer & Weiser’s Harvest Peach & Hatch Pepper Sauce.

The third course featured sliced pork tenderloin, roasted brussels sprouts, and Fischer & Wieser’s Original Roasted Raspberry Chipotle Sauce.

The fourth course featured a lemon cheesecake with a lemon glaze.

It was such a fun night full of friends, cooking, laughter and joy! 10% of proceeds went to Refugee Services of Texas and the important work they’re doing to help refugees in Austin and throughout Texas. A huge thank you to all who supported me and attended this dinner!
