I’m so impressed by the quality, authenticity and amazing taste of Gambino’s Cajon Creole! Chef Kevin has been cooking for over 17 years and has had this food truck in town for 7 years. He is born and raised New Orleans and you can taste his love for the culture in his food. Take a look below at some of the amazing eats from Gambino’s!

Boudin Balls: true New Orleans style fried boudin with pickled chiles & creole mustard vinaigrette. I usually don’t like fried things but this was truly delicious!

Alligator Bites: amazingly tender crispy fried gator and kale slaw served with our chili garlic aioli – YUMMMMM!

Gumbo of the Day: an 8 oz pour of a rich dark gumbo with their truck made andouille sausage – I could eat this every single day.

BRUNCH BOWL OF YOUR DREAMS: two poached eggs on top of sweet potatoes, swimming in alligator sausage gravy with a bright peppery kick of arugula and homemade bacon – I think about this bowl all the time!

Catfish: WIld caught fried or blackened farm raised catfish served with your choice of side (homemade kennebec chips are a must)

The chuck and brisket cheeseburger is only available as a special and it’s the most simple and delicious burg!

Fluffy beignets with allllll the powdered sugars. No explanation needed.

You can find Gambino’s at The Picnic food truck park (1720 Barton Springs Rd) and they’re open Monday – Sunday: 11AM-9PM but are closed on Wednesday’s. They have rotating specials weekly, too. Get yourself over there ASAP!!!!
