Recipe #1: The Best Tacos
Tacos are pretty self explanatory to make, but do you ever get overwhelmed with all the options and choices? Sometimes when I go somewhere that has a “build your own bowl/taco/pizza/whatever” I worry about making the “right” decision. Well, this recipe will take all your taco-decision-anxiety away. It’s beefy, it’s cheesy, it’s simple but it’s all you need.
Ingredients:
1 lb grass fed ground beef
2 garlic cloves, chopped
1/2 can of unsalted black beans
1/3 cup corn
1 whole green bell pepper, sliced thinly
1 4-oz tin of hatch green chilies
1/4 cup of shredded colby jack
2 tsp of cayenne pepper
1 tbsp of garlic powder
salt and pepper to taste
6 corn tortillas
guacamole, salsa, lettuce (optional)
Directions:
- Grab a large sauté pan and put it on your stove at medium heat. Add ground beef, sprinkle some salt, pepper, and chopped garlic cloves, and cook thoroughly. Set aside, but leave the beef fat in the pan for the next step.
- Using the same pan, add the sliced bell pepper and sauté in the left over beef fat for 4-5 minutes. Add the black beans, corn, hatch green chilies, garlic powder, and cayenne. Let them all mingle in the pan for other 4-5 minutes, stirring occasionally.
- Warm up your tortillas on the skillet and sprinkle cheese on the WHOLE tortilla (not just down the center). I put 1/4 cup of cheese but I probably use more because cheese is love. I also recommend buying a block of cheese and shredding it yourself for freshness.
- Prepare yourself for a taco feast. Pile beef and veggie mixture on a warm, cheesy tortilla. Add your fave toppings (all the guac and salsa, please) and you are done!
