Recipe #55: Thai Red Curry

The ULTIMATE winter meal: spicy Thai red curry noodles with chicken and veggies 🍜 This is one of my top fave comfort meals that takes 20 minutes from start to finish! Clients love it too – and I just made it as part of my Christmas dinner this year. This Thai red curry is creamy, spicy, nutritious, and everything you want and need for a winter dinner (and it’s GF/DF) ✨

What you need:

• 1 can of full fat coconut milk
• 1.5 tbsp of red thai curry paste (I love @mikesorganic)
• 1 tbsp of coconut aminos
• 2 garlic cloves, minced or chopped
• 3 large carrots, sliced
• 2 cups of broccoli florets
• 2 cups of fresh baby spinach
• 1 cup of mushrooms, sliced
• 1.5 lb chicken breast
• pinch of salt and pepper

What to do:

1. Make your chicken in the air fryer or bake it in the oven: dice the raw chicken and generously sprinkle salt and pepper all over. Bake/air fry at 350F for 15-20 mins.

2. While your chicken is cooking, chop up your veggies. Grab a wok or large stir fry pan and set to medium heat, then drizzle in some avocado oil.

3. Add in your carrots and broccoli. I wait until the middle of my stir frying to add my garlic so that it doesn’t burn. Toss the carrots and broccoli around so they begin to cook and soften.

4. After 3-4 mins, add your mushrooms, garlic, and spinach. then add in the curry paste, coconut aminos, and a pinch of salt and pepper.

5. Continue to stir and allow to cook for 4-5 minutes, making sure the curry paste is evenly distributed.

6. Your chicken should be done by now, so add that to your pan and then add in the coconut milk. If your chicken isn’t cooked yet, add in the coconut milk, then add in the chicken as soon as it’s ready. Give it a good stir so everything’s incorporated, and simmer for a couple mins on low heat.

7. That’s it! enjoy with rice or noodles – I love the brown rice ramen noodles by @lotusfoods but for this meal i used sweet potato glass noodles and it was delish ✨
