Recipe #19: Green Chile Chicken Bake with Jaime’s Salsas

This recipe is not only easy and requires minimum measuring, but it’s comforting and absolutely DELICIOUS! Jaime’s Spanish Village Salsas are made with wholesome ingredients and full of bold flavor! They sent me a few of their products to concoct a recipe – here it is!

Ingredients:

1.5 lb of chicken thighs
1 can refried black beans
8-ish oz baby spinach
8 corn tortillas
1 small tin diced green chiles
1 beefsteak tomato, chopped
1 red bell pepper, chopped
1/2 jar Jaime’s Hot Green Salsa
1/2 jar Jaime’s Chile Con Queso

Directions:

Cook chicken thighs on stir-fry pan with garlic powder, cumin, paprika, red crushed pepper, salt and pepper. Dice chicken and set aside. Get a 9×13 glass baking dish and start layering your ingredients. Start with a few tablespoons of the Hot Green Salsa, then two tortillas, diced chiles, tomatoes, bell peppers, chicken, spinach, black beans, Chile Con Queso, and repeat until all ingredients are used. Bake for 30 minutes on 350 degrees. Garnish with cilantro and avocado. Enjoy!
