Recipe #21: Italian Stuffed Mushrooms
Ingredients:
8 oz of whole white mushrooms
12 oz ground pork
1 tbsp coconut oil
1 shallot, chopped
1/3 cup fresh parsley, chopped
1 tsp dried basil
1 tsp dried oregano
1 tsp garlic powder
1 tsp paprika
salt and pepper
4 oz cream cheese
1/3 cup grated parmesan
2 tbsp bread crumbs
Directions:
- Wash and dry mushrooms. Remove stems and set aside.
- Place sauté pan on stove over medium. Add oil and cook pork with shallots, parsley, basil, oregano, garlic powder, paprika, salt and pepper.
- Let cool for five minutes. Add cream cheese, parmesan and mix evenly.
- Fill mushroom caps with pork mixture and place evenly apart on baking sheet. Top with breadcrumbs and bake for 30 minutes on 350F. Let cool and serve!
