Recipe #21: Italian Stuffed Mushrooms

Ingredients:

8 oz of whole white mushrooms
12 oz ground pork
1 tbsp coconut oil
1 shallot, chopped
1/3 cup fresh parsley, chopped
1 tsp dried basil
1 tsp dried oregano
1 tsp garlic powder
1 tsp paprika
salt and pepper
4 oz cream cheese
1/3 cup grated parmesan
2 tbsp bread crumbs

Directions:

  1. Wash and dry mushrooms. Remove stems and set aside.
  2. Place sauté pan on stove over medium. Add oil and cook pork with shallots, parsley, basil, oregano, garlic powder, paprika, salt and pepper.
  3. Let cool for five minutes. Add cream cheese, parmesan and mix evenly.
  4. Fill mushroom caps with pork mixture and place evenly apart on baking sheet. Top with breadcrumbs and bake for 30 minutes on 350F. Let cool and serve!
