Hashimoto’s Protocol: Week 10

TEN WEEKS. I can barely believe it!!! While I haven’t adhered to the AIP diet, I know I’ve made great strides in resetting my liver, adrenals and gut health. I really am SO proud I’ve made it this far- everything I’ve politely refused a free drink at a media event, every time I’ve driven past P Terry’s without stopping, every time I chose my health over going out or pushing myself past my limits. I’m proud of these changes and to see what else is to come.

March 8
breakfast- O’Dough’s bagel with vegan cream cheese and jam
lunch- leftovers from Hyde Park
dinner- berry smoothie*
late night snack- hummus, veggies, rice crackers, turkey, olives and fruit my mom made for Joel and I (yeah, she’s a gem)

March 9
breakfast- Birch Benders paleo pancakes and fruit
lunch- gluten free and dairy free (gf/df) sandwich made by mom, Terra chips and freshly squeezed blood orange
dinner- pad woon sen with chicken from Sticky Rice

I went to Garland to see my mom and we had the most wonderful weekend. I have zero FOMO about sx because there’s nothing better than sweet time spent with family. We went shopping, we sat in her beautiful patio while Obie ran around the huge backyard that sits against the golf course, we had a long, tasty meals together and it was all so wonderful.

March 10
brunch- gf/df sandwich made by mom and Terra chips
dinner- sweet potato glass noodle with chicken and veggies from Chilantro
dessert- pureed frozen banana and strawberries 

March 11
lunch- 2 falafels, Amy’s gf/df mac n cheese with broccoli
snack- paleo banana bread*
dinner- cauliflower “grits” with grilled shrimp

I made the grits by boiling a bag of cauliflower florets and blending them with 1/3 cup of beef broth, 1/4 cup nutritional yeast, 2 garlic cloves, half a shallot, crushed red pepper and salt. I then added the pureed sauce on top of steamed riced cauliflower bits. I added grilled shrimp and chopped chives – soooo yummy!!

March 12
breakfast- O’Dough’s bagel with vegan cream cheese and jam and cashews
lunch- smashed avocado and fried eggs on gf toast
dinner- cauliflower “grits” with grilled shrimp

March 13
breakfast- paleo banana bread
lunch- sweet potato glass noodles, veggies and salmon poke from Nancy’s Sky Garden (one of my fave spots in town)
dinner- cauliflower “grits” with grilled shrimp and broccoli
snack- Siete chips

*berry smoothie: 1/2 cup frozen mixed berries, cashew milk, maca powder, coconut protein powder, 1 tbsp almond butter
*paleo banana bread: 25% cassava flour, 75% almond flour, 2 eggs, 1 tsp baking powder, 2 tsp cinnamon, 1 tbsp honey, 1 tbsp coconut oil, 2 ripe bananas
