Recipe #27: Masala Burger with American Lamb
The American Lamb Board had a few Austin bloggers create a burger using lamb and I came up with this very Indian, very delicious masala burger! Here’s how to make it:
For the patty:
1 tbsp ground cumin
1 tbsp ground coriander
1 tbsp fennel seeds
2 tsp garam masala
2 tsp turmeric powder
2 Kashmiri chili powder
2 garlic cloves, minced
1 lb ground lamb
Toppings:
Caramelized curried onions:
1/2 an onion, thinly sliced
1 tbsp of butter
1 tsp turmeric
1 tsp garam masala
Sliced and seared paneer:
1/3 lb fresh paneer, thinly sliced
1 tbsp butter
Fresh mango chutney:
1 ripe mango, cubed
1/2 shallot, minced
1 tsp cumin
salt and pepper
Raita dressing:
1/2 cup whole milk yogurt
1/4 cucumber, grated
Juice of 1 lemon
1 tsp garam masala
salt and pepper
Fresh tomato, sliced
Handful of mixed greens
White hamburger buns
Directions:
- Mix all the ingredients for the patty in a bowl and create three patties. Grill them on a cast iron flat top for 5 minutes on each side. Set aside.
- For the caramelized curried onions: slice half an onion thinly and cook it with a tbsp of butter. Add 1 tsp of turmeric and 1 tsp garam masala and cook for 10 minutes on low heat until caramelized.
- For the paneer: Slice thinly and sear on a pan on medium heat with butter for 60 seconds on each side.
- For the mango chutney: put chopped mango, minced shallot, 1 tsp of cumin, tsp of salt and pepper in a small bowl and mix together.
- For the raita: Mix the yogurt, grated cucumber, lemon juice, 1 tsp garam masala, salt and pepper until well combined.
To make your burger: grab a bun and toast it. Then, layer it up with mango chutney, fresh tomato, mixed greens, 1/3 lb lamb patty, paneer, caramelized onions, and raita dressing. Enjoy!!
