Meals to Heal Pop-Up Dinner
It was such a joy and pleasure cooking for the Meals to Heal dinner last month which benefited LIVESTRONG and all the important work they do! I created a 4 course gluten free menu that emphasized nutritional foods (while still tasting great). It all took place at the beautiful LIVESTRONG office on East 6th Street.
The first course was a quinoa salad mixed with spring greens, gala apples, walnuts, fresh herbs and an olive oil, lemon and balsamic dressing.
The second course was parmesan risotto with baby bella mushrooms, shredded kale, and spicy gulf shrimp (this was my personal favourite).
The third course was grass-fed steak with whipped sweet potatoes and fresh chimichurri sauce. This was a fan favourite!
The last course was a healthy dessert of White Mountain yogurt with fresh berries, coconut flakes, crushed graham crackers, and a brown coconut sugar rim.
It is also so much fun cooking for a crowd and having friends support me and my culinary adventures! Stay tuned for my next pop-up dinner later this fall!
