Tailgating with Texas Beef Council
The Texas Beef Council hosted a group of us and taught us everything we need to know about the perfect tailgate experience. From multiple ways to grill, to making the right appetizers, and everything in between!
For appetizers, they created an incredible queso (and one you can easily replicate at home)! They added some incredible brisket they had just smoked and it blew me away. Served with fresh guacamole, salsa, and white corn chips, this is the absolute best appetizer/snack for tailgating! They also made a snack of beef tenderloin, caramelized onions, and blue cheese on top of grilled naan for a delicious and flavorful snack. Last but not least was the beef crostini with balsamic and parmesan crisps. The parmesan and balsamic were the perfect bits of tangy!
Now comes the reeeaaaall fun stuff – FIRE! We learned everything we need to know about grilling from the grill master at Texas Beef Council. We learned about the perfect temperatures, how to lay the coal, cleaning and greasing the grill, and more. We grilled flat iron steaks which are the second most tender parts of beef. I have to say, I’ve never made a better steak in my life. I’ve always cooked them on the stove, but our grill master taught us that even with the most simple, smallest grill, you can make the best steak ever. It’s all about the cut of meat and technique. I was full from all the snacks but I ate ALL of my steak. I can’t rave about it enough!! We also had perfectly grilled vegetables, cole slaw with a citrus vinaigrette, and warm potato salad that perfectly accompanied the beautiful steaks we made.
