Recipe #20: The Ultimate Chia Seed Pudding

Chia seeds are just another health trend, right? Not this time! Chia seeds are rich in omega-3’s – an essential fatty acid that your body doesn’t produce, so you have to consume them. Omega-3’s are great for heart health and to help lower inflammation. In just 2 tbsp of chia seeds, there is around 10 g of fiber, 5 g of protein, 7 g of polyunsaturated fat, and 25% of your daily magnesium intake. That’s a lot of good stuff packed in a couple of spoonfuls!

I’ve tried several chia seed pudding recipes but this one is my fave – and I have my mom to thank for that! I add hemp seeds for extra protein and mango for potassium, fiber and vitamin C (plus they’re deeeelicious)!

Ingredients:

2 tbsp chia seeds
1/3 cup water, hemp milk OR almond milk
1/3 cup greek yogurt
1 tbsp pure maple syrup
1 tbsp hemp seeds
1/2 cup mango, chopped
12 oz mason jar or 2- 6 oz jars

Directions:

Place the chia seeds in a large mason jar with the water, hemp milk OR almond milk. Mix well. Add the greek yogurt, maple syrup, chopped mango and hemp seeds on top. Close lid tightly and refrigerate at least 4 hours or overnight. Enjoy in the morning!
