Galentine’s Dinner with American Lamb Board
I had the opportunity to host a fabulous Galentine’s Dinner with some of my favourite women this past weekend! American Lamb Board graciously sponsored this dinner because February is Lamb Lovers Month!
I made some very savory and delicious lamb chops from Ashley Rodriguez’s cook book, Date Night In. The lamb chop recipe includes lots of fennel seed and a very hot pan or grill. They were AMAZING!
I love cooking on my cast iron pan and getting those pretty grill marks. The chops were so juicy they didn’t even need sauce!
You KNOW I had to make the perfect place settings! I used a cream and gold table runner, mixed plates, mixed floral cloth napkins, gold rimmed and floral glasses, a big bouqet of beautiful flowers and a dish of pretty pink candy because why not?!
I also made honey dijon roasted carrots, mashed cauliflower with goat cheese, Moroccan cous cous with pomegranate seeds, and a spring green salad with pickled radishes and a lemon dill dressing (and a glass of rose or lemon-cucumber-mint infused water).
I didn’t forget about dessert. I picked up a sour cream pound cake and topped it with the most amazing chocolate mousse! Best part, it’s compliant with my Hashimoto’s Protocol!!!!! All you need are 2 ripe avocados, 1/2 cup of dark cocoa powder, 4 dates (soaked in water for 6 hours) and 1 cup of almond milk. Blend it on high and you have the most decadent, delicious raw chocolate mousse!
