Recipe #41: The Best Saffron Rice

With this simple recipe, your next chicken and rice dish will have heaps of flavor and depth thanks to a little thread of spice known as saffron. This is my favourite way to make rice and I almost never make plain rice anymore, because this is just that delicious!

Ingredients:

10-12 strands of pure saffron or super negin saffron threads
1/4 cup hot water
2 cups of water
1 cup of Basmati or Jasmine rice
1 tbsp ghee or butter
pinch of salt

Directions:

Use a mortar and pestle to grind the saffron. If you don’t have one, use a small bowl and the end of a wooden spoon or spatula. Grind it until it’s powder-like. Then add the hot water to the same bowl to open up the spice and let sit for five minutes.

Next, prepare your rice. Grab a small pot and add the water. Sprinkle in a pinch of salt and bring water to a boil. Meanwhile rinse the rice under cold water for a few minutes, and add the rice to the pot once the water has come to a boil. Bring to a simmer and add the lid. Wait a minute and then add in the butter and saffron mixture. Allow to cook until tender, about 10-15 minutes.

Rice should be fluffy and water should be absorbed. If this is your first time trying saffron and you’re unsure of the flavor, mix half plain rice with half saffron rice (as pictured) but I’m pretty positive you’re going to love it! Serve with roasted chicken, falafel and salad, or chicken tikka. Enjoy!!
