Recipe #43: GF Apple Fritter Cake
When you want something that screams comfort, make this gluten free apple fritter cake. Soft and cake-like + tart apples + cinnamon + crunchy oats + pecans on top… YUM. It’s the perfect balance of an apple fritter meets spongy vanilla spiced cake. Plus it pairs perfectly with ice cream for a delish dessert, or warmed up with a cup of coffee for a cozy breakfast.
Ingredients:
– 1.5 cups of pink lady apples, chopped
– 8 tbsp butter, softened
– 1/2 cup white sugar
– 1/2 cup brown sugar
– 2 eggs
– 1 tsp vanilla extract
– 1 tsp baking powder
– 1 tbsp ground cinnamon
– 1 tsp ground clove
– 1 tsp ground nutmeg
– 3 tbsp of honey
– 1 cup of gluten free flour
– 1 cup of almond flour
– 1/2 cup oats
– handful of pecans
– pinch of sea salt

Directions:
1. Preheat the oven to 325.
2. In a medium sized bowl, whisk the butter and sugar together until fully incorporated. Then add in the eggs and vanilla. Whisk for 30 seconds and set aside.
3. In a separate bowl, mix the baking powder, gluten free flour, almond flour, cinnamon, clove, nutmeg and sea salt together. Then add the dry ingredients into the wet and mix until fully incorporated.
4. Next, fold in the chopped apples *cue david and moira’s infamous “fold it in” scene – just fold it in!*
5. Butter an 8 in round cake pan or a glass dish and pour in the batter. Sprinkle the oats on top, then the pecans, and drizzle honey all over (go as minimal or as crazy as you want with the honey – I say more is more!)
6. Bake for 35-40 minutes and let rest for a few before digging into this apple fritter cake (by this point your house will smell absolutely divine and it’ll be hard to wait!)
