Recipe #45: Fluffy Gluten Free Waffles

Waffles + chardonnay are the new hottest pair in town 🧇  I’ve created the perfect brunch recipe to pair with RedThumb Natural Wine’s crisp, light and unoaked chardonnay.



A few notes about this lovely natural chardonnay – it has notes of green apple, stone fruit and a hint of butterscotch mingled with a light creaminess. It’s fermented using indigenous yeast in stainless and cement… and it pairs perfectly with waffles!

Here’s what you’ll need to make these perfectly fluffy, protein packed gluten free waffles:

1 cup gluten free all purpose flour
1/2 cup vanilla protein powder
1 tsp baking powder
1 tsp saigon ground cinnamon
2 tbsp melted butter or coconut oil
1/2 cup oat milk
1 egg
handful of strawberries
dollop of whipped cream
drizzle of maple syrup
Directions:

Mix the dry ingredients first, then add the wet ingredients and gently mix until incorporated.

Add the batter to your greased waffle iron (bonus points for texas shaped) and cook the waffles for 3-4 minutes.

Then, add the strawberries, whipped cream and syrup on top of your scrummy waffles.

Enjoy these fluffly waffles with your glass of RedThumb chardonnay!
